At Saltwater Eco Tours, we’re incredibly lucky to have an amazing team who make every tour unforgettable. We're not just a group of colleagues, we're a close-knit crew who work together to bring you the best experiences.

Simon Thornalley is a proud Kaurareg and Tjungundji man, born and raised on Gubbi Gubbi/Kabi Kabi Country on Queensland’s Sunshine Coast. A saltwater man through and through, Simon’s life has always been guided by the ocean. From a young age, he lived aboard a timber missionary boat from Thursday Island, learning to read the tides, the wind, and the rhythms of Sea Country - a connection that continues to shape his identity, his values, and his purpose. 🌴


Simon’s deep relationship with the water is woven into generations of knowledge and craftsmanship. His father was a timber boat builder, and from childhood, Simon was immersed in the art of shaping vessels from wood - an experience that instilled in him a love for working with his hands and an appreciation for the stories and spirit carried by the sea. These early years sparked a lifelong calling to protect, honour, and live in harmony with the ocean.


Today, Simon is the founder and Managing Director of Saltwater Eco Tours, a groundbreaking Indigenous tourism company based in Mooloolaba. Now in its fifth year, the business operates from a heritage-listed timber sailing vessel - restored by Simon himself - and offers cultural experiences that celebrate Indigenous knowledge, environmental awareness, and connection to Country βš“οΈ


Through his work, Simon bridges traditional wisdom with modern leadership, creating space for First Nations voices within the tourism and environmental sectors. His life’s journey - anchored in saltwater, timber boats, and cultural pride - reflects a deep and enduring commitment to caring for Country and inspiring others to walk gently on these lands and waters. 🌊

Having worked on The Spray alongside Simon in the first 3 years of Saltwater Eco Tours, Jenna is now happily based in the Saltwater Experiences retail space, surrounded by all the beautiful products she’s hand-selected. ✨ Jenna also manages Adminstration from home, while raising her two beautiful children, Malu & Dylan. πŸ’•


This year, Jenna is excited to take on big events and dive into new creative projects πŸ‘€ Outside of Saltwater Eco Tours, Jenna is a talented dancer and dance teacher, sharing her love of movement with others! πŸ’ƒ

Kieran has been part of the crew since he was 16 and is now our go-to cocktail maestro, famous for crafting some of the best cocktails on the coast! 🍹 With a passion for mixology, he’s always perfecting his craft to give every passneger the best experience.


When he’s not onboard, Kieran loves getting outdoors - whether it’s hitting the trails for 4x4 driving, camping in the wild, or just enjoying time in nature. 🌲 His favourite part of the job? The live music on our Sunset Tour, where he can discover new musicians and enjoy the magic of the coast as the sun sets. πŸŽΆπŸŒ…

Aunty Bridgette Chilly Davis, Law Lore Woman of the Mooloolah Kabi Kabi has been with us since the very beginning. We are forever grateful for her deep connection to country and her guidance has enabled us to connect more people to culture here on the coast. Aunty has provided many years of her powerful Welcomes to Country, snoking ceremomies, cultural sharing, education, ochre annointments and valuable insights on board the Cultural Experiences. 

She also leads her own experiences in Mooloolaba called Jhdundah Walking Tours.  We are truly honoured to have Aunty Bridgette as part of the Saltwater family. 

If you’ve stopped by our Saltwater Experiences shop, chances are you’ve met Sophie! She helps to keep everything running smoothly behind the scenes - handling bookings, marketing, and always ready to pitch in and help out on the boat.


Sophie’s favourite part of the coast? Noosa 🌊 She loves spending time paddleboarding and exploring the natural beauty of the area which is a world away from her countryside home in the UK. 🌿

Zahra joined our crew in 2025, bringing vibrant energy and deep passion to everything she does - especially when it comes to advocating for vulnerable youth, with a strong focus on First Nations communities ✨


She’s dedicated to creating safe, inclusive spaces where everyone feels respected and heard. With a natural gift for connecting with people from all walks of life, Zahra’s warmth, positivity, and genuine care make guests feel instantly welcome!

Meet Skye, our incredible onboard chef! Since joining the crew in October 2024, she’s brought a beautiful blend of creativity and heart to the kitchen - crafting original recipes using fresh, locally sourced ingredients and native flavours in collaboration with Traditional Owners like Aunty Bridgette Chilli and Aunty Dale Chapman.


With a deep respect for culture and a passion for sustainability, Skye’s menus celebrate the connection between land and sea in every bite. But her talents don’t stop at the galley - Skye is also a musician who often performs on deck, weaving her love of food and music into an unforgettable Saltwater experience. 🌊🎢

Gabs is currently studying Animal Ecology, but when she’s onboard, you’ll find her shaking cocktails, plating up delicious food, and chatting with guests- always happy to share her love for the local area. Whether she’s behind the bar, in the galley, or on deck handling the ropes, Gabs brings a calm, caring energy that makes everyone feel right at home.


Off the water, she’s a big fan of live music and can often be found dancing with friends at her favourite festivals 🎢🌞

Hannah Jane is family to the heart and soul of The Spray of the Coral Coast. Having been there from the very beginning, she’s seen firsthand the passion and dedication that goes into creating the unforgettable experiences Saltwater Eco Tours is known for.


We’re so excited to have Hannah Jane joining forces with the incredible Karl S. Williams for a very special Sunset Tour on 1st June 2025. It’s going to be one for the books πŸŒ…πŸŽΆβœ¨

Mason joined us in 2025 as a deckhand, and he's quickly become an integral part of the crew. His favourite part of the role? Being out on the water and sharing his knowledge of native foods with passengers on our Bushtucker Cruise πŸŒΏπŸ›Άβ 


When he's not onboard, Mason loves exploring the diverse landscapes of the Sunny Coast hinterland - chasing waterfalls, wandering through nature, and uncovering hidden gems. He’s also a bit of a coffee and food enthusiast, always on the hunt for the best local spots β˜•πŸ΄

Currently studying Traditional Chinese Medicine, Kubs brings a warm, uplifting energy to the Saltwater Eco Tours team. With a strong connection to Country through her Aboriginal and South Sea Islander heritage, she brings both heart and depth to everything she does.


Onboard, Kubs serves up delicious food, mixes standout cocktails, and makes sure every guest has a memorable time. Her love for all things saltwater runs deep - when she’s not working, you’ll often find her at the beach or catching waves on her surfboard. πŸ„‍β™€οΈπŸŒŠ


One of her favourite parts of the job? Listening to the incredible musicians who perform onboard, connecting with guests from around the world, and continuing to learn more about her culture and local bush tucker traditions.

It had been more than several years since Simon Thornalley had seen his childhood home the Stephan Davies , but within moments of stepping on board the ex-Torres Strait mission vessel he was met with an instant feeling of belonging. Built in 1952, Stephan Davies was the Thornalley’s home from the late 80’s to early 2000’s, before Simon and his older brother Oliver began their schooling on the Sunshine Coast. His parents, Su and Stephan, provided the ultimate adventure-filled childhood, sailing up and down the QLD East Coast, Island hopping and immersing themselves in the land and sea. This, combined with Simon’s seafaring ancestral history and Indigenous heritage from the Torres Straits cemented his love for a life on the ocean. The young boys were well- known to other boat owners along the East-coast, as their sun-bleached hair could be seen bopping up and down, amusing themselves on deck. The “good old days on Stephan Davies”, his parents still say as they flick through old photos… In 2018, after returning from 6-months in Antarctica and two years in Canada, Simon was invited to join his family friends and the next owners of Stephan Davies for a casual Sunday sail off Mooloolaba. He was taken back in time as they started up the gardener engine and headed out the Mooloolah river towards Mudjimba Island. It was soon after this experience that Simon began his extensive journey to find his own unique timber sailing vessel. Two challenging years of building a business model, long days developing tourism concepts as well as inspecting potential vessels, before the slap-in-the-face Covid, Saltwater Eco Tours was finally ready to launch mid-2020. Simon and his partner Jenna began welcoming passengers on their Mooloolaba based tours, while navigating new restrictions and policies that would not have existed if they had begun operating a mere 6 months prior. Many believed they were crazy, starting a new tourism business in the peak of a global crises, but this motivated them further to tap into the local tourism industry and work hard on making it a success. During the lead up of launching, Simon was faced with various hurdles. Not only was he creating a company from the ground up, but he also had to find the right vessel, the one that aligned with his vision of authenticity and the one that would set them apart from other operators. After flying to Melbourne, Tasmania, and Cairns to view potential vessels, Simon kept coming back to one that was moored just 5 minutes from his own home. A 58ft, timber ketch made from solid Huon Pine and built off the blueprints of the infamous ‘Spray’ by Joshua Slocam. Admittedly, he felt drawn to this boat, perhaps due to the rarity and historical significances that resonated back to his childhood on Stephan Davis. This Spray replica, now named ‘Spray of the Coral Coast’ was something special. Built in 1908 in Melbourne, she had seen many owners and undergone many restorations, all the while keeping her original beauty intact. Simon knew Captaining this vessel and opening her up to the public for tours would be the perfect way to create something truly unique. Simon’s vision for Saltwater Eco Tours was to provide a tourism experience where people were able to learn about local Indigenous Culture through the art of storytelling, music, and delicious native foods. He worked hard to build relationships and partnerships with local Traditional Owners of the Gubbi Gubbi/Kabi Kabi region to create an authentic tourism product allowing passengers to experience and learn about local culture and history. Spray of the Coral Coast further enhanced the tours with passengers stepping aboard and becoming immediately fascinated with the history of the vessel, in admiration of her pristine condition for 113- years of age. Tours took off immediately, as the local and surrounding South East Queensland community were seeking new adventures within the boundaries of domestic travel. In hindsight, the everchanging restrictions through out 20/21 allowed Simon and Jenna to further find their feet and develop as a new company, with the target market focusing on locals as opposed to international travellers. Through Simon’s endless hard work and unique business concept, came a variety of incredible opportunities that has seen him be a voice within the growing industry. In 2019, Simon was chosen as a delegate to travel to Vancouver as part of the World Indigenous Tourism Conference , in 2020 he was then chosen as a Young Indigenous Tourism Leader through The Department of Tourism, Innovation and Sport , as well as recently joining the Aboriginal and Torres Strait Islander committee for Tourism and Events QLD. With over 10 months of welcoming passengers on board each weekend, Simon and Jenna have established themselves as reputable tourism operators in Mooloolaba, both local to the area and both excited to be able to connect further with the community. Not only are the flagship Cultural Tours a highly sought-after experience from locals and visitors alike, but their efforts to support the arts industry with Sunset Tours and live music are growing in popularity, with acoustic artists often playing to max-capacity. Now the Captain of his own timber sailing vessel, Simon often reflects to his childhood growing up on Stephen Davies and the life he was fortunate enough to experience, living off the land and understanding the importance of our ocean. His connection to the environment and sustainable practices is also threaded into Saltwater Eco Tours ethos as they continually seek ways to improve as Eco-Operators. With a deepening drive to grow the business, Simon knows it is his responsibility to ensure the beauty and history of his timber vessel is showcased, as well as the connection to Indigenous Culture and the ocean is shared.
